A hot wallet differs from a cold one in just this: a hot wallet is connected to the internet, and a cold one is not. A hot wallet is an app on your phone or an extension in the browser, always online. Such a wallet is convenient, everything is at hand, and it suits small amounts for everyday use, the ones you pay or transfer with often. A cold wallet keeps your keys offline, most often in a separate hardware device. Its keys do not go online, so for savings it is more reliable, though using it is a little less convenient.
The easiest way to picture it: a hot wallet is like cash in your pocket, quick to reach but risky to carry all at once; a cold one is like a safe at home, harder to get into but where the bulk lives. Hence a general rule: the more convenient the access to your money, the wider the door for an attack. So the question is not which wallet is better, but which one for which task.

Where the line really runs
The line between hot and cold is not whether the wallet is connected to the network right now. A phone in airplane mode is still a hot wallet, because its key is kept in ordinary software that goes online at any moment. The real line is where the key is kept and where the operation is signed.
In a cold wallet the key stays inside a separate device and does not leave it. When you confirm a transfer, the signing happens on the device itself, and only the finished signature goes out, not the key. That is exactly why you can plug a cold wallet into a computer or phone for an operation without exposing the key.
Even so, cold does not mean invulnerable. You can lose money here too: if the seed phrase leaks, if the device is counterfeit, or if you confirm an operation on it without looking. All three troubles are about how you handle the device and the key, not about connecting to the network.
How to use a cold wallet safely
The trick is not to never connect a cold wallet, but to use each type for its purpose and correctly.
A cold wallet stays safe in use if you keep to a few things. Buy the device only from the maker or its official reseller, not second-hand or from a marketplace, so you do not get a tampered one. Verify every operation on the device’s own screen — the recipient address and the amount, not only in the window on the computer, since an infected computer can show one thing and send another for signing. Keep the seed phrase offline and show it to no one, because it opens access to the money bypassing the device itself.
A hot wallet, by contrast, you keep light: only the amount you would not mind risking and that you need for current spending. Large sums are not kept on it.

For a cold device, look at how it stores the key, ideally in a separate secure chip, how established and well-known the maker is, whether the device shows the full operation details on its own screen, and how recovery works if the device is lost or breaks, whether by a standard seed phrase or some other way.
